You know, for someone who is not into Thanksgiving, I certainly enjoyed myself over the last week! I hope you all had a wonderful Thanksgiving as well.
Today, I wanted to share several things with you. So let’s get started!
First, the treats I made for Thanksgiving.
Strawberry fudge, mint chocolate fudge, pumpkin muffins, and chocolate pumpkin muffins. Do you think I went a tad overboard?
All four of these items were incredibly easy to make.
1 can strawberry cake frosting
1 bag white chocolate chips
Melt the white chocolate chips in a microwave in 30-second intervals. When the chips are melted, stir in the frosting. When well mixed, pour the mixture onto a cookie sheet or other flat pan. Refrigerate for a minimum of 30 minutes, then cut into squares and serve!
Yes, I realize this is not true fudge. But it is absolutely delicious, and the recipe is very easily modified for nearly any flavor that you can think of. I found a can of peppermint frosting at Wal-Mart, and decided to experiment with it and a bag of milk chocolate chips, which is how my Mint Chocolate Fudge was born. Yum!
1 can pumpkin puree
1 box yellow cake mix
Combine the cake mix and pumpkin in a bowl. The batter is extremely sticky. Spoon into a muffin tin and bake according to the directions on the box. Easy!
The chocolate pumpkin muffins are identical to the pumpkin muffins, except that you use a box of Devil’s Food cake mix instead. These muffins are fluffy and delicious, and they look beautiful!
Our Thanksgiving was wonderful. Everyone in the family brought several dishes, and we had a wonderful time. I can’t wait to see everyone again in a few weeks for Christmas!
This weekend I decided to do a little redecorating around the house, and while I was at it, I went ahead and got the rest of my Christmas decorations up. I’ll leave you with pictures of the final results. I am so delighted with how everything looks now!
